🧬 What Are Acylglycerols Made Of?
They are made of two building blocks:
- Glycerol – a sweet, sticky 3-carbon alcohol.
- Fatty Acids – long chains of carbon and hydrogen atoms, like tiny tails.
Think of glycerol as the base or handle and the fatty acids as 3 tails attached to it.
🔥 State at Room Temperature
- If an acylglycerol is liquid at room temperature, it’s called an oil.
Example: Sunflower oil, olive oil, castor oil. - If it’s solid at room temperature, it’s called a fat.
Example: Butter, ghee, lard.
🧠 Easy way to remember:
“Plant oils pour, animal fats sit” – Plants usually give oils, and animals usually have fats.
🧪 Chemical Nature
- Acylglycerols are esters, which are formed by combining fatty acids and glycerol through a process called dehydration synthesis.
- Dehydration synthesis means removing water during the bonding.
One OH from glycerol and one H from fatty acid come off, forming H₂O (water).
🔗 Triacylglycerols (Also Called Triglycerides or Neutral Lipids)
🧬 Structure
- The most common form of lipids in living organisms.
- Made of 1 glycerol and 3 fatty acid chains.
- The fatty acids can be same or different.
Think of it like a fork with 3 prongs:
- The handle is glycerol.
- The 3 prongs are fatty acid chains.
Each of glycerol’s 3 carbon atoms has a hydroxyl group (-OH) where a fatty acid can attach.
