  • Chitin is a modified version of cellulose.
  • It is found in:
    • Exoskeletons (outer hard shells) of insects, crabs, and lobsters.
    • Cell walls of fungi (instead of cellulose in plants).

🧬 Structure of Chitin

  • Chitin is also a polymer of glucose, joined in a similar way to cellulose (beta-1,4 linkages).
  • BUT — one difference:
    • Each glucose molecule in chitin has a nitrogen-containing group attached.
    • This extra group adds strength and makes it tougher and more resistant than cellulose.

Digestibility

  • Most organisms cannot digest chitin.
  • Only some bacteria and fungi have the enzymes to break it down.
